www.virtualweberbullet.com This site is great regardless of what you cook on.  The Weber Smokey Mountain aka WSM is the $179.99 baseline of great BBQ Pits.  It is used by a whole bunch of folks who consistently win BBQ competitions.  If you spend more on a quality pit all you get is more capacity and a popular way to increase capacity is to get more WSM's.  You can easily spend more and get an inferior pit.  I have been on the web sine Netscape 2.0 was state of the art.  I have never found another forum so polite and nice to newbie's in all my years of surfing. Please remember this is a family site so no four letter words like "Diet".

Meat

Beware meat that is Flavorized or some such by the addition of liquids this is not what you want.

Ribman All about ribs

Smart and Final/Cash and Carry, Costco and Sam's Club are all sources of meat for award winning teams.

  • The best prices on Beef and Pork I've found is  Smart and Final Smart & Final stores Non-membership warehouse grocery stores; Arizona, California, Florida, Nevada and Mexico. They also go by the name Cash & Carry Wholesale foodservice supply warehouse; California, Idaho, Oregon and Washington.

  • If you ask you can get the classic BBQ cuts of Beef and Pork at Costco and Sam's Club they have good prices and are more national than Smart and Final.

Meat Wholesalers will often happily sell to the public.  Just don't expect a display of meat.  They normally open early and close early and don't work weekends.  Minimums range from a plastic cryovac package to a case.  You need to know what your asking for when you walk in or phone them.  You can get a better choice is you order a case of exactly what you want and the price will be better than a butcher but not as good as the first three above.

Includes some of our recipes.  While this site is dedicated to the Weber Smokey Mountain (WSM) it is a gold mine for anyone wanting to learn how to cook real BBQ and for experts looking to refine their technique.  It is broken into two main parts an incredibly comprehensive website and a wonderful discussion forum that treats complete beginners with respect.  Don't forget the recipes on the forum section.

Bread, Pizza & Focaccia on the BBQ
Grills make great bread cookers.  The ceramic grills like a Big Green Egg are the ultimate.  Any grill can cook bread with the addition of an inexpensive pizza stone.  When cooking indirect you can place the dough directly on a clean oiled grate.

Equipment

Weber Home of the 22" Weber Kettle all you need to get started and the Weber Smokey Mountain one of the all time great pits, its one and only short coming is capacity and given the price many solve that limitation by owning multiple WSM.s.  I have owned a half dozen Charcoal starting chimneys including the Kingsford and nothing but nothing beats a Weber chimney for starting charcoal.  If you want to turbo charge it then sit it on top of your fish or turkey fryer.  Great instructions for indirect heat cooking and recipe ideas.

Dave Klose Pits Dave Klose is talked about with great reverence by the folks in Texas.  He not only makes the most popular premium Pit in America today but is a genuinely nice and extremely helpful guy.  I cut my teeth on a mass merchandise offset smoker and then stepped up to a Klose 18"x30" smoker. The very first time I cooked with it I came home with two ribbons.  A Klose is worth every penny! He also has some very fine stainless steel rib racks.

Lodge Cast Iron  Lodge is the maker of all manner of fine cast iron cookware including Dutch ovens.   Please be warned it is very hard to only buy one piece of cast iron cookware and once started it is hard to stop.

Ceramic Smokers

Some folks who feed logs into big steel pits have a less than generous attitude towards ceramic cookers.  The Asians have been cooking with these for many centuries.  They can cook low and slow or sear at 1000°f.  Take care, flash burns are a danger with these.  All three these units can cook world class food.  T

  • Big Green Egg Probably the most popular of the three.  The BGE forum is one of the best on the web.
  • Primo Grill The only one Made in the USA Ceramic cooker.  This seems to be very well engineered and there are less reports of problems than with some others.  Primo grills with miss matched shades of green on top and bottom may be the best Ceramic value available.  They are well engineered right here in the USA.
  • Kamado This is a well made and popular unit
